and smooth muscles in the arteries. Carnosine is an important antioxidant that protects cells from destruction and buffers acids that cause fatigue. It is critical for protein synthesis and breakdown and may help prevent nerve degeneration and diabetes. French researchers found that carnosine absorption during digestion was directly proportional to the amount of carnosine in meat. Other studies found that supplementing the diet with beta-alanine and histidine for one month increased isometric endurance capacity of the thigh muscles and prevented neuromuscular fatigue by boosting tissue carnosine levels.
