Eggs have been a breakfast staple for hundreds of years, until scientists established a link between high cholesterol and heart disease in the 1950s and ‘60s. Eggs are high in cholesterol, so it was reasonable to assume they could increase the risk of heart disease. Eggs have been in a nutritional limbo ever since. Recent studies found ...
that eggs are excellent sources of protein. Harvard researchers, in a study of 117,000 nurses, found that eating an egg daily posed the same risk of heart disease as eating one once a week. Another study found that eating three eggs a day promoted strength and muscle mass in people in a weight-training program without increasing cholesterol. Eggs are low in calories and fat and are excellent sources of high-quality protein, iron, B vitamins and minerals. Eating eggs for breakfast prevents hunger longer, because they contain protein and fat. (WebMD, retrieved September 17, 2007)
