Many people have trouble sleeping after consuming a dinner high in fats and protein, such as a juicy steak and baked potato loaded with sour cream, butter and cheese. Australian scientists showed that eating a meal high in simple carbohydrates before bed promoted sleep, possibly by increasing tryptophan and serotonin levels in the brain. Tryptophan and serotonin are well-known, sleep-inducing chemicals that also stimulate the sleep hormone melatonin. It took men longer to fall asleep after eating low-glycemic index meals (a measure of how much a meal increases blood sugar). Increasing blood sugar several hours before bed may make it easier to fall asleep. (American Journal Clinical Nutrition, 85: 426-430, 2007)
